Though "Co Ba" simply translates to "Auntie Number Three", expect nothing simple here. This Chelsea-based restaurant pays respect to the fresh, complex Vietnamese flavors, and will make the health-focused nod in appreciation for the cuisine's inherent knack for the grill.
This Viet eatery is authentic as the real-deal joints of SoCal or Northern VA, but prettified and upscaled (cuz' you know, this is New York!). We can thank restauranteur Steven Duong (also behind Net, Cyclo, Tet and newest spinoff Co Ba 53 in Midtown) for offering beeflicious pho to prep you for the winter ahead, umami baby back ribs known as Suon Nuong, and crusty yet elegant banh mis that are neither yuppified nor messy, according to Village Voice.
